About Garlic
Garlic, Allium sativum, is a member of the Amaryllis family (Amaryllidaceae), which also includes leeks, onions, and shallots. The pungent flavor of garlic is caused by a chemical reaction that occurs when the garlic cells are broken. The flavor is most intense shortly after cutting or chopping. This chemical reaction cannot occur after garlic is cooked, which is why roasted garlic is sweet rather than pungent.
Powerful Antioxidant
This very versatile healing herb also has antioxidant properties. The sulfhydryl (sulfur and hydrogen) compounds in garlic are potent chelators of toxic heavy metals, binding with them so that they can be excreted. These same compounds are effective protectants against oxidation and free radicals.

Allicin

Found rarely in other plants, these compounds are largely responsible for garlic's antibacterial, antiviral, and antioxidant properties. Of particular importance is the naturally occurring allicin, as it is present in about 80% of the sulfur compounds found in garlic. When garlic is crushed, allicin is allowed to interact with the enzyme allinase, thus producing garlic's prime antibacterial substance, the oily liquid allicin.

In another study conducted in Germany, 261 patients from 30 general practices were given either garlic powder tablets or a placebo. After a 12 week treatment period mean serum cholesterol levels dropped by 12% in the garlic treated group and triglycerides dropped by 17% compared to the placebo group.
